Watermelon Cookie Cake for Watermelon Day šŸ‰šŸŖšŸœ

When my sister—who teaches second grade—told me her class was having Watermelon Day, I knew I had to send something fun (and sweet!) to help them celebrate. I ended up creating the cutest and easiest watermelon-themed cake, and it turned out to be such a hit that I had to share it here in case you ever need a simple, themed treat!

This isn’t your average cake—it’s actually a cookie cake, which made it even quicker to throw together. Here’s how I made it:


šŸ‰ What You’ll Need:

    •    1 large roll of Toll House cookie dough (this is your ā€œcakeā€ base)

    •    Buttercream frosting (I used my go-to recipe)

    •    Pink and green food coloring

    •    Mini chocolate chips (for the watermelon ā€œseedsā€)

    •    Plastic ants (yes, really—they added the perfect summer picnic touch!)


🧁 How It Came Together:

Ā Ā Ā Ā 1.Ā Ā Ā Ā I rolled the cookie dough into one big round layer and baked it according to the package directions (just keep an eye on the edges so it doesn’t overbake).

Ā Ā Ā Ā 2.Ā Ā Ā Ā Once it cooled, I whipped up a batch of my classic buttercream, then split it in half and dyed one portion pink and the other green.

Ā Ā Ā Ā 3.Ā Ā Ā Ā I spread the pink in the center and used the green for the outer ring, just like a watermelon slice.

Ā Ā Ā Ā 4.Ā Ā Ā Ā Then I sprinkled on mini chocolate chips to look like seeds.

Ā Ā Ā Ā 5.Ā Ā Ā Ā And the final touch—giant plastic ants I found on Amazon, which totally stole the show!
